How to Grow Monster Heads of Romaine & Butterhead Lettuce All Summer

There is nothing quite as satisfying as harvesting crisp, sweet, sun-warmed lettuce leaves straight from your backyard for dinner. Yet, many gardeners struggle with summer lettuce: once temperatures climb above 75°F (24°C), lettuce plants bolt, shooting up tall bitter flower stalks and turning inedible.

With these professional market-gardener techniques, you can enjoy sweet, tender, non-bitter salad greens all summer long.

1. Choose Heat-Tolerant, Slow-Bolt Cultivars

  • Jericho: The ultimate heat-resistant Romaine, bred in the hot Jordan Valley.
  • Buttercrunch: A classic compact butterhead that resists bolting under summer sun.
  • Muir (Batavian): Extremely crisp, sweet, and slow-bolting even during heatwaves.
  • Red Sails: High in antioxidants with stunning burgundy ruffled leaves.

2. Install 30%–40% Black Shade Cloth

Direct summer afternoon sun overheats soil and triggers bolting hormones. Erect a lightweight wooden frame with 40% shade cloth or plant lettuce in the natural morning shade cast by climbing tomatoes and trellised cucumbers.

3. The ‘Cut-and-Come-Again’ Harvesting Secret

Don’t wait for the entire head to mature before harvesting. Harvest only the outer 4 to 5 mature leaves 1 inch above the base, leaving the central growing heart intact. The plant will continuously push out fresh, tender new leaves for up to 8 consecutive weeks!

4. Cold Morning Harvesting & Ice Bath Shock

Always harvest lettuce at dawn when leaves are plump with morning moisture. Immediately plunge freshly cut leaves into a bowl of ice-cold water for 10 minutes. This locks in crisp cellular turgor pressure, keeping greens crunchy for up to 3 weeks in the refrigerator!
